Ingredients

1/3 cup mayonnaise

1/2 limes , juice of or 1 teaspoon lime juice
1 teaspoon honey
2 eggs , lightly beaten
1 cup panko breadcrumbs ( Japanese breadcrumbs-I used whole wheat )
1 teaspoon soy sauce
2 teaspoons Thai sweet chili sauce
2 cans tuna in water , drained
1/3 cup celery , finely chopped ( I used the food processor )
1/3 cup green onion , finely chopped
1/3 cup red bell pepper , finely chopped
4 sandwich buns , thin , cut in half and toasted ( or leave untoasted if you prefer )
1/3 cup baby greens
1 tablespoon olive oil ( if frying )
salt and pepper

Instructions

1.In a small mixing bowl, whisk together mayonnaise, Thai sweet chili sauce, fresh ginger, lime juice, and honey. Refrigerate.
2.In a large mixing bowl, combine eggs, panko breadcrumbs, soy sauce, and Thai sweet chili sauce. Stir in tuna, celery, green onion, and red bell pepper. Mix well.
3.Divide tuna mixture into 4 portions and shape each portion into a patty.
4.Heat olive oil in a non-stick skillet over medium heat. Cook patties for 3-4 minutes per side, or until crispy and browned.
5.To assemble, place baby greens on the bottom half of each sandwich bun. Top with a tuna patty and a spoonful of the mayo mixture. Finish with the top half of the bun.
