Instructions

1.In a food processor, grind together the dried red chili peppers, coriander seeds, cumin seeds, onion, garlic cloves, grated lemon zest, grated ginger, juice and zest of the limes, hot paprika, creamed coconut and Thai red curry paste until smooth.
2.In a large pan or wok, cook the pork cubes until browned on all sides. Add the ground spice mixture from the food processor, stirring to coat the pork.
