350 g scallops ( preferably Tasmanian )
1 tablespoon unsalted butter
1 medium brown onion , diced
1 -2 tablespoon curry powder
1 1/2 cups reduced-fat milk
2 tablespoons plain flour
400 g potatoes ( uncooked weight )
2 tablespoons plain flour
350 g puff pastry

Instructions

1.Preheat oven to 200C.
2.Rinse the scallops under cold water and set aside.
3.In a saucepan, melt the butter over medium heat and add the diced onion. Cook for 1-2 minutes until soft.
4.Add the curry powder and cook for a further minute, stirring constantly.
5.Gradually add the milk to the pan while whisking to remove any lumps.
6.Add the flour to the pan and whisk until smooth.
7.Increase heat and bring the mixture to a boil.
8.Reduce heat and let the mixture simmer for 3-5 minutes, stirring constantly, until thickened to the consistency of a sauce.
9.Peel and thinly slice the potatoes and fold them into the curry sauce with the scallops.
10.Mix flour and butter together to form a paste.
11.Roll out the puff pastry thinly and line a pie dish with the pastry.
12.Pour the scallop mix evenly into the pastry dish.
13.Top the scallop mix with the remaining pastry, crimping the edges to seal.
14.Brush the pastry with the flour and butter paste.
15.Cut two small slits in the top of the pastry.
16.Bake for 35-40 minutes until the pastry is golden brown and the filling is cooked through.
17.Serve hot with a side salad for an impressive dinner.
