Ingredients

2 lbs potatoes , boiled , peeled , and thinly sliced
1/2 lb bacon , cubed
2 onions , finely chopped
1 1 lb emmenthaler cheese or 1 lb jarlsberg cheese , grated
1 cup heavy cream
butter
salt and pepper

Instructions

1.Preheat oven to 375°F.
2.In a large skillet, cook bacon over medium heat until crispy. Remove with a slotted spoon and drain on paper towels.
3.Add chopped onions to bacon drippings and cook until softened—about 10 minutes.
4.Layer half of the sliced potatoes in the bottom of a large baking dish. Top with half of the onions, half of the bacon, and half of the cheese. Repeat the layers once more and pour heavy cream over the top.
5.Cover the baking dish with foil and bake for 1 hour.
6.Remove foil and bake for an additional 15 minutes until the top is golden brown and bubbling. Remove from oven and let cool for a few minutes before serving.
