Ingredients

1 tablespoon butter
3 pounds whole russet potatoes
12 ounces thick cut bacon , cut into 1/2-inch pieces
2 large onions , thinly sliced
1 teaspoon salt , or to taste
1/2 teaspoon freshly ground black pepper , or to taste
1 pinch cayenne pepper , or to taste
1/2 cup dry white wine
3/4 cup creme fraiche
1 round Reblochon cheese or other ripe , washed rind cheese
Tartiflette is a classic French dish originating from the Alpine Savoie region. It was traditionally served to hungry skiers and is now a popular comfort food for cold winter nights. The potato-based dish is made with bacon, onions, creme fraiche, and reblochon cheese (although other cheeses can be used). The cheese forms a crust on top of the casserole which is then sliced and eaten with a spoon. The creamy and savory flavor makes it a great main dish.

Instructions

1.Preheat oven to 375°F (190°C).
2.In a large pot, boil potatoes until tender then drain and let cool slightly.
3.Peel cooked potatoes and slice into 1/4-inch thick rounds.
4.In a large skillet, cook bacon until crispy then add onions and cook until translucent.
5.Add salt, pepper, and cayenne pepper to the skillet then deglaze with white wine.
6.Lower heat and add creme fraiche. Stir well and remove from heat.
7.Butter a 9x13-inch baking dish and layer half of the potatoes in the bottom.
8.Pour half of the bacon mixture over the potatoes and spread evenly.
9.Repeat with the second half of the potatoes and bacon mixture.
10.Cut reblochon cheese into small cubes and scatter them over the top of the casserole.
11.Bake in preheated oven for 35-40 minutes, or until the cheese is melted and bubbly. Serve hot.
