Ingredients

2 1/2 pounds red potatoes , peeled and cut into 1/4-inch slices
1 tablespoon butter
1 yellow onion , diced
1/2 pound bacon , cut crosswise into 1/4-inch pieces
1 container creme fraiche
salt and ground black pepper to taste
1 round Brie cheese , sliced
Tartiflette is a classic French dish that originated in the Savoie region of the country. It's a hearty and indulgent recipe that is perfect for a cold winter night, or any time when you're craving comforting, cheesy potatoes. The dish is made with layers of sliced potatoes, bacon, sautéed onions, and melted Brie cheese. It's creamy, savory, and oh-so satisfying. Instructions

1.Preheat oven to 375°F.
2.Boil the sliced potatoes in salted water for 5-7 minutes, then drain and set aside
3.In a large skillet, melt butter over medium heat. Add diced onion and sauté until softened, about 5 minutes.
4.Add bacon to the skillet and cook until crispy, stirring occasionally.
5.Layer half of the potatoes in a large baking dish. Sprinkle with salt and pepper.
6.Spread half of the bacon and onion mixture over the potatoes.
7.Layer the remaining potatoes on top and sprinkle with salt and pepper.
8.Spread the remaining bacon and onion mixture over the potatoes.
9.Spoon creme fraiche over the top of the dish and arrange the sliced Brie on top.
10.Bake for 25-30 minutes or until cheese is bubbly and golden.
11.Serve hot.
