Ingredients

1 1/2 cups unbleached all-purpose flour , unbleached
1/4 teaspoon salt
12 tablespoons unsalted butter , unsalted , room temperature
2 -3 tablespoons water
3 cups prunes , pitted
1/2 lemon , juice of
12 tablespoons unsalted butter , unsalted , at room temperature
1 cup confectioners ' sugar
3 eggs
1/4 cup flour
1 1/2 cups fine ground almonds , finely ground
1/4 cup armagnac
1/3 cup apricot preserves , warmed
Tarte Aux Pruneaux (Prune Tart --Gascogny) is a traditional French dessert from the Gascogny region. This tart is made with a buttery crust and a filling of prunes, ground almonds, and Armagnac, a type of brandy from the region. The tart is baked until set and brushed with warmed apricot preserves for a beautiful glaze. It can be served warm or at room temperature, and is often enjoyed with a dollop of whipped cream or a scoop of vanilla ice cream.

Instructions

1.Preheat oven to 375°F.
2.Sift 1 1/2 cups of flour into a bowl with 1/4 tsp salt.
3.Add 12 tbsp of unsalted, room temperature butter and mix until crumbly.
4.Add 2-3 tbsp of water and mix until large clumps form.
5.Roll out the dough on a floured surface and fit it into a tart pan.
6.Prick the dough with a fork and chill for 15 minutes.
7.Mix 3 cups of pitted prunes with juice of 1/2 lemon, 12 tbsp of unsalted butter and 1 cup of confectioners sugar.
8.Beat in 3 eggs, 1/4 cup flour, 1 1/2 cups of finely ground almonds and 1/4 cup of Armagnac.
9.Pour the mixture into the tart shell and smooth the top with a spatula.
10.Bake for 45-55 minutes until set.
11.Brush the hot tart with 1/3 cup of warmed apricot preserves and let it cool to room temperature.
