Ingredients

2 heads garlic ( the whole head , not the individual cloves )
1 tablespoon olive oil
salt and pepper
3 sprigs fresh thyme
1 teaspoon Dijon mustard
1 1/2 cups mayonnaise
1 tablespoon fresh tarragon , chopped
Tarragon Aioli is a classic French sauce that is used to accompany seafood, poultry, eggs, or roasted vegetables. It is a mayonnaise-based sauce that is flavored with roasted garlic and tarragon. The roasted garlic adds a warm, nutty flavor to the sauce, while the tarragon adds a hint of sweetness and a slight anise-like taste. Instructions

1.Preheat oven to 375°F.
2.Cut the top off of each garlic head to expose the cloves inside.
3.Place each garlic head on a piece of foil, drizzle with olive oil, and sprinkle with salt and pepper.
4.Add a sprig of thyme to each garlic head.
5.Wrap the garlic in the foil and bake for 45 minutes or until tender.
6.Remove the garlic from the oven and let cool.
7.Squeeze the roasted garlic cloves into a bowl and add the Dijon mustard and mayonnaise.
8.Stir until well combined and then add the chopped tarragon.
9.Stir again and serve immediately or store in an airtight container in the refrigerator for up to a week.
