Ingredients

10 ounces split red lentils
2 tablespoons sunflower oil ( or vegetable oil )
1 teaspoon cumin seed
1 large onion , sliced
1 tablespoon tomato paste
1 teaspoon ginger-garlic paste
2 green chilies , slit
salt , to taste
handful cilantro , chopped , for garnish

Instructions

1.Rinse lentils under running water and drain.
2.Heat oil in a large pan to medium heat. Add the cumin seeds and cook for around 30 seconds or until fragrant.
3.Add the sliced onions and stir until golden brown.
4.Add tomato paste, ginger-garlic paste and slit green chilies. Stir well and cook for two minutes.
5.Add the lentils, required salt and around 3 cups of water. Mix well and bring to boil.
6.Once boiling, reduce heat to medium-low and simmer for around 15 minutes or until lentils are tender.
7.In another pan, heat oil for preparing Tarka. Add some cumin seeds and cook until fragrant. Add some red chili powder and cook for a few seconds.
8.Pour the Tarka on the boiled lentils and mix.
9.Garnish with fresh cilantro.
10.Serve with steamed basmati rice or naan.
