Ingredients

2 large onions , chopped finely
5 tablespoons olive oil
3 baking potatoes , like russets ( about 1 1/2 pounds )
1/4 teaspoon saffron thread
1/4 cup chicken broth
6 large eggs
1/2 cup thinly sliced scallion top
salt & freshly ground black pepper

Instructions

1.Preheat the oven to 400°F (200°C).
2.Using a sharp knife or a mandoline, cut the onions and potatoes into thin slices.
3.In a 10-inch oven-safe nonstick skillet, heat 3 tablespoons of the olive oil over medium heat. Add the onions and cook, stirring occasionally, until softened, about 10 minutes.
4.Add the sliced potatoes, saffron, chicken broth, 1 teaspoon salt, and a few grinds of black pepper. Stir well to combine everything.
5.Whisk the eggs in a bowl with 1/2 teaspoon salt and a few more grinds of black pepper. Pour the eggs over the potatoes and onions in the skillet.
6.Top the omelet with the sliced scallion tops. Transfer the skillet to the oven.
7.Bake the omelet until the eggs are set and the top is lightly browned, about 15 minutes.
8.Take the skillet out from the oven and let it cool for a couple of minutes. Use a spatula to loosen the edges of the omelet and gently slide it onto a large plate. Cut the omelet into wedges and serve warm or at room temperature with a fresh salad if desired.
