Ingredients

4 tablespoons peanut oil
1 chicken , cut into pieces
1 onion , chopped
2 cloves garlic , chopped
2 tablespoons curry powder
1 tablespoon dried red chili pepper
2 teaspoons black pepper
8 cups chicken stock
1 large tomatoes , peeled and chopped
1 cup coconut , grated ( DO N'T USE SWEETENED ! )
2 ripe bananas

Instructions

1.Heat oil in a large soup pot over medium heat. Add chicken and brown on all sides.
2.Add onion and garlic and cook until the onion is soft.
3.Add curry powder, dried red chili pepper, and black pepper. Cook until fragrant.
4.Add chicken stock, tomato, coconut, and bananas. Bring to a boil then reduce heat to low and simmer until chicken is tender and soup is slightly thickened.
5.Remove chicken pieces from the pot and shred the meat. Then return the meat to the pot and mix well.
6.Simmer for about 5 more minutes.
