Ingredients

1 beef blade roast , approx 3 lbs
salt
all-purpose flour
1 tablespoon olive oil
1 cup barbecue sauce ( your favourite kind )
1/2 teaspoon ground pepper
1/4 cup Worcestershire sauce
1 teaspoon dry mustard
1/2 cup lemon juice
1 tablespoon chopped garlic
1 cup beef stock
6 -8 potatoes , peeled & , quartered
6 -8 carrots , peeled & , sliced
1 large onion , chopped

Instructions

1.Begin by preheating the oven to 325°F (160°C).
2.Liberally season the beef roast with salt and then coat with flour.
3.Heat the olive oil in a large Dutch oven over medium-high heat and brown the roast on all sides, about 5 minutes.
4.In a separate mixing bowl, combine the barbecue sauce, pepper, Worcestershire sauce, dry mustard, lemon juice, garlic, and beef stock and whisk well. Pour this mixture over the browned roast in the Dutch oven and place the potatoes, carrots, and onion around the roast.
5.Cover the Dutch oven and transfer it to the preheated oven. Roast the beef for 3-3.5 hours, or until tender.
6.Once cooked, remove the roast from the oven and allow it to rest for a few minutes before slicing and serving.
