2 scallions , thinly sliced
1 garlic clove , minced
1/2 cucumber , cut into strips
1/2 cup white radish ( moo or daikon )
5 red radishes , thinly sliced
2 teaspoons fresh ginger , slivered
1 ounce mung bean sprouts

Instructions

1.In a mixing bowl, combine the mung bean flour with 1 cup of cold water. Mix well to form a smooth batter.

3.Drain the noodles and rinse under cold water to stop the cooking process. Set aside.
4.In a pan, heat the vegetable oil over medium-high heat. Add the beaten egg and cook until scrambled. Remove from the pan and set aside.
5.In the same pan, add the shiitake mushrooms and cook until tender. Remove from the pan and set aside.
6.In a mixing bowl, combine the soy sauce, rice vinegar, red pepper powder, scallions, garlic, and ginger. Mix well.
7.In a large mixing bowl, combine the noodles, scrambled egg, shiitake mushrooms, cucumber, white radish, red radishes, mung bean sprouts, and the dressing. Toss well to combine.
