Ingredients

6 large firm tomatoes
8 ounces uncooked chorizo sausage
2 tablespoons olive oil
1 medium white onion , finely chopped
2 celery ribs , finely chopped
1 poblano pepper , finely chopped ( may substitute green bell pepper )
2 garlic cloves , finely chopped
coarse salt & freshly ground black pepper
3 tablespoons chopped cilantro leaves
1/2 cup seasoned dry bread crumb
1 cup grated monterey jack pepper cheese
1/4 cup grated parmesan cheese

Instructions

1.Preheat oven to 375 degrees Fahrenheit.
2.Cut the tops off of each tomato and discard. Carefully scoop out the center of each tomato and set aside.
3.In a large skillet, crumble chorizo sausage and cook until browned. Remove sausage from the pan and set aside.
4.In the same skillet, heat olive oil over medium heat. Add chopped onion, celery and poblano pepper, and sauté until the vegetables are soft and tender. Add finely chopped garlic and sauté for another minute.
5.Add chorizo sausage back into the skillet and mix in chopped cilantro leaves, coarse salt, black pepper, and seasoned dry bread crumbs. Cook for a couple of minutes.
6.Remove from heat and stir in grated Monterey jack pepper cheese and grated Parmesan cheese.
7.Stuff each tomato with the chorizo-cheese mixture and place in a baking dish.
8.Bake for 20-25 minutes until the tomatoes are tender and the cheese is melted and bubbly.
