Instructions

1.In a large salad bowl, add the chopped napa cabbage, sliced jicama, shredded or spiralized carrot and yellow beet, and halved cucumber slices. Toss well to combine.
2.In a blender, combine the chopped garlic cloves, tightly packed cilantro, peanut butter, lime juice, soy sauce, rice vinegar, peeled and chopped fresh ginger, coconut milk, sugar, sesame oil, and sambal oelek. Blend until smooth and creamy.
3.Drizzle the dressing over the salad and toss well to coat all the ingredients evenly.
4.Garnish the salad with chopped raw peanuts, additional chopped cilantro, and a lime wedge.
5.Serve chilled and enjoy!
