700 g sweet potatoes , cut into wedges ( skin on )
2 red onions , peeled & quartered
1 tablespoon oil
1 jar tandoori paste ( makhani , simmer sauce )
4 tablespoons Greek yogurt or 4 tablespoons cream
2 tablespoons of fresh mint , chopped
salt & pepper

Instructions

1.Preheat the oven to 200C/180C fan/gas mark 6.
2.Place sweet potatoes and onions in a large bowl and toss with oil, tandoori paste, salt and pepper.
3.Transfer the vegetables to a large baking tray and spread out into an even layer. Roast in the oven for 25-30 minutes until tender and lightly charred.
4.In a small bowl, mix Greek yogurt or cream with chopped mint and salt.
5.Serve the Tandoori spiced sweet potatoes with the minty yogurt or cream on top.
