Ingredients

1 tablespoon sesame oil
2 garlic cloves
1 tablespoon ground galangal
1 stalk lemongrass
2 plantains
1 leek
200 ml carrot juice
200 ml vegetable stock
1 tablespoon tandoori paste
8 shrimp
1 tablespoon lime juice
50 ml Thai fish sauce

Instructions

1.Slice the garlic and lemongrass stalk in half lengthwise. Set aside.
2.Heat the sesame oil in a large saucepan over medium-high heat. Add the garlic and lemongrass. Cook for several minutes, stirring occasionally, until fragrant.
3.Peel and dice the plantains. Cut the leeks into thin slices.
4.Add the plantains and leeks to the saucepan and continue to stir occasionally for a few more minutes until the vegetables start to soften.
5.Add the carrot juice, vegetable stock, and tandoori paste. Bring the mixture to a boil and then reduce heat to low. Cover and let simmer for about 20 minutes.
6.Peel and devein the shrimp.
7.Add the shrimp, lime juice, fish sauce, and pepper to the soup. Stir gently and let simmer for another 5-10 minutes until the shrimp is cooked through.
8.Remove the lemongrass stalks and discard. Serve the soup hot, garnished with chopped lemongrass.
