Ingredients

1 cup thick natural yoghurt ( I use Greek )
2 tablespoons ready-made tandoori paste
4 skinless salmon fillet
1 clove garlic , crushed
1/4 cup unsweetened coconut
1 cucumber , peeled and finely diced
2 tablespoons light olive oil
ground sweet paprika , to sprinkle
2 cups basmati rice
1/2 teaspoon saffron thread
1 small lemon , juice and zest of , grated
2 tablespoons chopped cilantro

Instructions

1.Preheat your oven to 450 degrees Fahrenheit (230°C).
2.In a bowl, mix yoghurt, tandoori paste, and garlic until well combined.
3.Smear the mixture over both sides of the salmon fillets and let them marinate in the fridge for at least 30 minutes.
4.To make the rice, boil 4 cups of water in a large saucepan over medium-high heat. Add rice, saffron, lemon juice, and zest. Reduce heat, cover, and simmer for 18 minutes, or until rice is tender.
5.In the meantime, mix coconut, cucumber, cilantro, and olive oil in a large bowl. Season with salt and pepper to taste. Set aside.
6.Place the salmon fillets on a baking sheet lined with parchment paper and sprinkle them with paprika. Bake for 10-12 minutes until the salmon is cooked through.
7.Serve the salmon with rice and sambal on the side.
