Ingredients

500 g tamarind pods ( sweet is specified , regular tamarind is better if you like more of a sour flavour , says the original )
6 cups water ( or a little bit more )
1 1/2 cups golden caster sugar or 1 1/2 cups honey , for more subtle sweetness
1 dash ground cloves ( optional )

Instructions

1.Remove the shells and strings from the tamarind pods and wash them thoroughly.
2.Place the tamarind pods in a large pot with 6 cups of water. Bring to a boil and then reduce the heat. Simmer for 30-40 minutes or until the pods are soft.
3.Remove from the heat and let it cool a little. Then, using your hands or a spoon, remove the seeds and fibrous parts.
4.Place the pulp and any remaining liquid in a blender or food processor and blend until smooth.
5.Add the sugar or honey and ground cloves if using to the tamarind pulp and cook over medium heat, stirring constantly.
6.Cook for approximately 30 minutes or until the mixture has thickened to the consistency of jam.
7.Pour the hot jam into sterilized jars and let it cool down. Then refrigerate.
