Ingredients

1 ounce concentrated tamarind pulp
1/2 cup boiling water
1 lb filet of beef
2 chilies , coarsely chopped
1 tablespoon fresh cilantro
1 teaspoon ground galangal
2 teaspoons ground lemongrass
2 tablespoons vegetable oil
1 onion , chopped
2 garlic cloves , crushed
2 tablespoons fish sauce
1 teaspoon sugar
2 ounces coconut milk
5 ounces eggplants , cut into 1-inch cubes
1 lime , rind grated and juiced
Tamarind Beef Curry is a traditional dish from Thailand's Isan region, where tamarind trees grow abundantly. Instructions

1.Soak tamarind pulp in boiling water for 10 minutes. Use a strainer to remove the seeds and pulp.
2.Cut the filet into small pieces.
3.Grind cilantro, chilies, lemongrass, and galangal into a fine paste.
4.Heat oil in a wok or large frying pan over high heat.
5.Add the onion and garlic and cook until they are soft and translucent.
6.Add the curry paste and cook until fragrant.
7.Add the beef and cook for 1-2 minutes until browned.
8.Add the fish sauce and sugar. Stir to combine.
9.Add the coconut milk, eggplants, and tamarind sauce.
10.Bring the mixture to a boil, then reduce heat and simmer for 10-15 minutes until the beef is tender.
11.If the sauce is too thick, add a little water.
12.Stir in lime juice and grated rind just before serving.
