4 slices turkey bacon , finely chopped
1 lb ground turkey
2 teaspoons chili powder
2 teaspoons thyme , dried
1 teaspoon bacon seasoning ( optional )
1 1/2 teaspoons coriander , ground
4 garlic cloves , chopped
1 onion , smalled chopped
1 cup beer
14 1/2 ounces tomatoes and green chilies , drained
1 1/2 cups cheddar cheese , shredded
1/4 cup cilantro , fresh chopped
1/2 cup Greek yogurt

Instructions

1.Preheat oven to 375°F (190°C).
2.In a medium pot, bring milk to a boil. Stir in cornmeal until fully combined. Add boiling water to the pot, then whisk until combined. Add salt, pepper, honey, and butter; continue to stir until it reaches the consistency of porridge.
3.Pour the mixture into a greased 9x13-inch casserole dish and bake for 20 minutes.
4.In the meantime, heat olive oil in a large skillet over medium heat. Add chorizo, bacon, ground turkey, chili powder, thyme, bacon seasoning, and coriander. Cook for 10-12 minutes or until the meat is cooked through.
5.Add garlic and onion to the skillet and cook until onion is translucent.
6.Pour in beer and cook for about 5 minutes or until almost completely reduced.
7.Add tomatoes and green chilies, stirring until heated through.
8.Spread the meat mixture over the cornmeal and top with shredded cheddar cheese. Broil on high for 3-5 minutes or until the cheese is melted and bubbly.
9.Garnish with cilantro and Greek yogurt, then serve.
