Ingredients

3 large eggs
1 tablespoon vegetable oil
3 tablespoons dashi ( optional )
1 1/2 teaspoons sugar
1 teaspoon soy sauce
1 teaspoon mirin
1 pinch salt

Instructions

1.In a bowl, beat the eggs until smooth and then add dashi, sugar, soy sauce, mirin, and salt.
2.Mix thoroughly and strain through a fine mesh sieve into another bowl.
3.Heat a square tamagoyaki pan (or a non-stick frying pan) over medium heat.
4.Brush the pan with vegetable oil.
5.Pour a thin layer of the egg mixture to cover the bottom of the pan.
6.When the surface starts to set, roll up the end of the omelet toward you, making a tight roll.
7.When the roll reaches the opposite end of the pan, slide it back to the edge of the pan.
8.Brush the empty part of the pan with oil and pour in more egg mixture, lifting up the omelet roll to let it flow underneath the roll. Repeat this process until all egg mixture has been used and the omelet is firm but not hard.
9.Cool it down and cut into bite-sized pieces.
