2 -3 tablespoons stock , dashi ( can make stock from instant granules , see packaging for instructions , alternatives -- chicken or veg )
1 tablespoon mirin ( Japanese cooking wine )
1 1/2 tablespoons sugar
1 teaspoon soy sauce
1 -2 green onion , chopped

Instructions

1.Combine eggs, dashi, mirin, sugar, soy sauce, and green onions in a bowl.

5.Pour about a quarter of the egg mixture into the pan.
6.Gently roll the egg from the far end to the near end of the pan with chopsticks.
7.Add another quarter of the egg mixture and roll up again over the existing egg roll.
8.Repeat until you have used all the mixture.
9.Remove from the pan, slice and serve.
