Ingredients

1 head cauliflower ( makes about 3 cups riced )
1 tablespoon oil , neutral
3 tablespoons sesame oil
3/4 cup onion , diced
2 teaspoons garlic , minced
crushed red pepper flakes ( optional )
1 cup frozen peas
1 cup carrot , diced
2 eggs , slightly beaten
3 tablespoons soy sauce
1 tablespoon fish sauce
This Take-Out Umami Cauliflower Fried Rice recipe is a healthier version of the traditional fried rice that we all know and love. It's made with riced cauliflower instead of rice, which makes a low-carb and lower calorie option for those who want to enjoy the flavors of fried rice without the added carbs. The combination of veggies and sauces adds great flavor and texture to the dish, and avocado or toasted sesame seeds could be great additions for some crunch. Instructions

1.Remove the leaves from the cauliflower and cut it into small florets. Pulse in the food processor until it resembles rice.
2.In a large skillet, heat the oil over medium-high heat.
3.Add the onion and sauté until it softens and becomes translucent.
4.Add garlic and red pepper flakes (if using) and stir for another minute.
5.Add the peas and carrot and sauté for an additional 2 minutes.
6.Push the vegetables to the side of the skillet and pour the slightly beaten eggs into the cleared space. Scramble the eggs until they are cooked through and then mix them in with the vegetables.
7.Add the cauliflower rice, soy sauce, and fish sauce to the skillet, stirring everything together until the cauliflower is heated through and tender, about 5 minutes.
8.Serve hot sprinkled with sliced scallions and a squeeze of lime juice, if desired.
