Ingredients

2 2 cups flagolet beans or 2 cups great northern beans
1 pork rinds , cut into about 10 strips , 8 tied together with string
4 flat-leaf parsley stems
4 garlic cloves
2 bay leaves
8 black peppercorns , crushed
3 onions , peeled and stuck with 3 whole cloves
2 carrots , peeled and quartered
2 stalks celery , quartered
2 teaspoons salt
1 1/2 lbs pork shoulder , cut into bite-sized pieces
1 teaspoon dried thyme
1/2 lb andouille sausages or 1/2 lb other spicy sausage
2 cups fresh breadcrumbs
Cassoulet is a hearty French dish traditionally made with white beans, pork sausage, and pork shoulder. This take-out version uses flagolet or great northern beans, and andouille sausage for a bit of spice. The dish is slow-cooked in the oven, allowing the flavors to meld together and create a delicious savory meal. While this dish takes some time and effort to prepare, it is well worth it for the rich and satisfying flavors.

Instructions

1.Soak the beans overnight in enough water to cover them by 2 inches.
2.Preheat your oven to 325 degrees F (165 degrees C).
3.Drain and rinse the beans and put them in a large pot with the pork rind strips, parsley stems, garlic, bay leaves, peppercorns, onions, carrots, celery, 2 teaspoons of salt, and enough water to cover the beans by 2 inches.
4.Bring the mixture to a boil and then reduce the heat to low, cover it with a tight-fitting lid, and let it simmer for 1 hour.
5.In a large Dutch oven, brown the pork shoulder pieces over medium-high heat until they are golden brown.
6.Add the thyme, the sausage pieces, and the beans (including all the liquid and the vegetables) to the Dutch oven with the pork, and stir to combine.
7.Cover the Dutch oven and transfer it to the oven. Bake for 1 hour.
8.Uncover the Dutch oven, and sprinkle the surface of the cassoulet with the breadcrumbs. Return the Dutch oven to the oven and bake, uncovered, until the breadcrumbs are golden brown, about 15 more minutes.
