8 ounces diced chicken breast meat

1 tablespoon harissa
1 1/2 teaspoons ras el hanout
1/2 cup water
1 1/2 tablespoons tomato sauce
1 tablespoon butter
1 bunch fresh spinach , washed and chopped
8 eggs
1 cup frozen peas
1/3 cup Parmesan cheese
1 pinch salt and pepper to taste

Instructions

1.Preheat the oven to 375F.
2.In a large skillet, heat the vegetable oil over medium-high heat.
3.Add the cubed potatoes and cook for 5 minutes until slightly browned.
4.Add the diced chicken breast meat and cook for another 5-7 minutes until browned.
5.Add the diced onion, harissa, and ras el hanout and sauté until the onions are softened, about 5 minutes.
6.Pour in the water and tomato sauce and stir to combine.
7.Reduce heat to medium-low, cover, and simmer for 15 minutes.
8.Remove from heat and stir in the butter and chopped spinach until wilted.
9.Transfer the mixture to a large oven-safe dish and create 8 wells in the mixture.
10.Crack an egg into each well and sprinkle the frozen peas and Parmesan cheese evenly over the dish.
11.Season with salt and pepper to taste.
12.Place in the oven and bake for 10-12 minutes or until the eggs are set to your liking.
