Ingredients

500 g tapioca flour
1 sweet potatoes
1/2 cup wheat flour
2 chicken breasts , finely diced
2 tablespoons oil
2 tablespoons soya sauce
2 stalks shallots , finely chopped
1 can bamboo shoots , finely chopped
Taiwanese cuisine is an Asian fusion of Japanese, Chinese and Southeast Asian cooking techniques. Sticky Sweet Potato Dumplings are a popular snack and use Tapioca Flour, prevalent in South East Asia, to make the dumpling casing. The filling is made of chicken, bamboo shoots, and scallions which are sautéed in soy sauce. A mash of sweet potato is added to this filling to create a hearty, filling snack. Sweet Potato Dumplings can be steamed or pan-fried and are popular during tea time or as a main meal. Taiwanese Chicken-Stuffed Sticky Sweet Potato Dumplings are a perfect appetizer for any party or a delicious meal on a cold evening.

Instructions

1.Boil the sweet potatoes until soft, peel and mash them in a mixing bowl.
2.Add tapioca and wheat flour to the bowl and mix thoroughly.
3.Knead the dough, divide it into small circular portions and flatten them using your palm.
4.In a pan, heat oil and add chicken, soya sauce, shallots and bamboo shoots.
5.Sauté everything until the chicken is cooked thoroughly.
6.Take a small portion, place it in the middle of the flattened dough and pinch the edges to make a ball.
7.Repeat the process until you’ve used all the dough and filling.
8.In a separate pot of boiling water, add the dumplings and let them cook until they float on top.
9.Serve hot.
10.Note: You can also pan-fry the dumplings for a crispier texture.
