18 ounces lean ground beef ( about 2 1/4 cups )
1 cup soft white breadcrumb
2 cloves garlic , crushed
2 tablespoons chopped fresh parsley
1 teaspoon dried oregano
1 pinch of freshly grated nutmeg
1/4 teaspoon ground coriander
2/3 cup freshly grated parmesan cheese
2 -3 tablespoons milk
flour , for dusting
3 tablespoons olive oil
14 ounces dried tagliatelle pasta noodles ( about 1 3/4 cup )
2 tablespoons butter , diced
salt and pepper
3 tablespoons olive oil
2 large onions , sliced
2 stalks celery , thinly sliced
2 cloves garlic , chopped
1 can chopped tomatoes
4 1/2 ounces sun-dried tomatoes packed in oil , drained and chopped
2 tablespoons tomato paste
1 tablespoon molasses , sugar
2/3 cup white wine or 2/3 cup water

Instructions

3.Form the meat mixture into small meatballs and coat them lightly with flour.

5.Cook the tagliatelle according to its package directions, then drain and toss with a bit of olive oil and diced butter.
6.In another large pan, heat 3 tablespoons of olive oil over medium heat. Add the onions, celery, and garlic and sauté until translucent, about 5 minutes.
7.Add the chopped tomatoes, sun-dried tomatoes, tomato paste, molasses or sugar, and white wine or water to the pan. Stir until well combined and let the mixture simmer for 10-15 minutes, until it has thickened slightly.
8.Add the meatballs to the tomato sauce and let everything cook for an additional 5-10 minutes.
9.Serve the meatballs and sauce over the prepared tagliatelle noodles, garnished with freshly grated parmesan cheese and a sprinkle of chopped parsley.
