Ingredients

1 kg lamb shoulder , cut in 2 cm cubes
2 large onions , cut into 2 cm cubes
1/2 teaspoon mildly hot paprika
1 bunch fresh coriander , finely chopped
1/4 teaspoon powdered saffron
1/2 teaspoon ground ginger
500 g quinces , peeled , halved and cored
60 g butter
1 cup pitted prune

Instructions

1.Preheat the oven to 150°C/300°F/gas 2.

3.Working in batches, brown the lamb pieces on all sides until golden brown. Transfer to a plate and set aside.
4.In the same dish, add the onions and sauté for 4-5 minutes until softened and lightly browned. Add the paprika, coriander, saffron, and ginger. Cook for 1-2 minutes until fragrant.
5.Add the lamb back to the dish and stir in 500 ml of water. Bring to a simmer and cover the dish tightly. Transfer to the oven and cook for 2 hours.
6.Add the quinces and prunes to the dish. Stir everything together and spoon over any juices to coat the fruit.
7.Return the dish to the oven and continue to cook for an additional hour until the lamb is tender and the fruit is soft.
