Tafelspitz is a traditional Austrian dish that is typically served with apple horseradish and roasted potatoes. It is often considered the national dish of Austria and is served in many restaurants throughout the country. Boiling the beef in a large pot with vegetables and spices gives it a hearty and comforting flavor that is perfect for a cold day. The dish is also a great way to use a less expensive cut of meat, as boiling the beef makes it tender and flavorful. Whether you're looking for a comforting meal or just want to try a classic dish from Austria, Tafelspitz is a great option.

Instructions

1.Wash the beef bones and place them in a large pot with enough water to cover the meat.
2.Add the beef roast and bring the water to a boil.
3.Skim off the foam that forms, then add the bay leaves, black peppercorns, juniper berries, and a generous amount of salt.

5.Meanwhile, peel the carrots, turnips/parsnips, celeriac, and onion. Cut them into quarters.
6.Add the vegetables to the pot about an hour before the beef is done.
7.Remove the cooked beef and vegetables from the pot onto a platter, discard the bones, and slice the beef thinly.
