Ingredients

8 -12 soft flour tortillas ( I use the flavored ones , i.e . spinach , sun-dried tomatoe , etc . )
1 lb ground beef or 1 lb ground turkey
1 cup chopped onion
1 clove garlic , minced
1 can chopped green chili ( optional )
1 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon oregano
1/4 teaspoon cumin
2 cups shredded monterey jack cheese or 2 cups monterey jack pepper cheese
8 eggs , beaten
2 1/2 cups sour cream
2 chopped tomatoes
shredded lettuce
sliced black olives

Instructions

1.Preheat your oven to 350°F (175°C). Grease a 9-inch (23cm) pie pan.
2.Place 1 tortilla at the bottom of the pie pan, pressing it down and up the sides to create a crust.
3.In a skillet over medium-high heat, cook ground beef or turkey, onions, and garlic until the meat is no longer pink. Drain any excess fat.
4.Add green chilies, chili powder, salt, oregano, and cumin, and stir well. Remove the skillet from heat.
5.Place half of the meat mixture on top of the tortilla crust, followed by half of the shredded cheese. Repeat this layering process until all ingredients have been added.
6.In a mixing bowl, beat eggs, sour cream, and chopped tomatoes until well blended. Pour this mixture over the top of the meat and cheese layers.
7.Bake for 40-45 minutes or until the quiche is set and the top is golden brown. Allow to cool for 5-10 minutes before slicing and serving.
8.Garnish with shredded lettuce and sliced black olives.
