Ingredients

3 eggs , lightly beaten
2 cups picante sauce , divided
1 can kidney beans , rinsed and drained
1 can mexicorn , drained
1 medium onion , chopped
2 cans sliced ripe olives , drained
3/4 cup dry breadcrumbs
1 envelope taco seasoning
1 teaspoon ground cumin
1 teaspoon chili powder
2 lbs ground beef
2 cups shredded cheddar cheese
additional picante sauce ( optional )
These taco meat loaves are a fun take on traditional meatloaf, flavored with classic Mexican spices like chili and cumin. Instructions

1.Preheat oven to 350° F (175° C).
2.In a large bowl, combine eggs, 1 cup picante sauce, kidney beans, mexicorn, onion, olives, breadcrumbs, taco seasoning, cumin, chili powder, and ground beef. Mix well.
3.Divide the meat mixture into 8 equal portions.
4.Place each portion into a greased muffin tin.
5.Press the mixture firmly and compactly into each muffin tin.
6.Top each muffin tin with remaining picante sauce.
7.Bake for 30 minutes or until cooked through.
8.Sprinkle shredded cheddar cheese evenly over the top of each meat loaf.
9.Return pan to oven and bake for additional 5-10 minutes, or until cheese is melted.
10.Remove from oven and let cool for a few minutes.
11.Use a knife to loosen sides and remove from muffin tin. Serve hot.
