Ingredients

3 cups cooked rice
1/2 cup dried split yellow peas , soaked 1 hour and cooked in water to cover until tender
1 lb ground lamb
2 medium onions , chopped
1/2 teaspoon salt
fresh ground pepper
1/2 teaspoon turmeric
1/4 teaspoon cinnamon
1/4 teaspoon ground cloves
1/2 cup dried pitted prunes , chopped
1 medium onion , chopped
1/4 cup chopped almonds
1 tablespoon butter
1 tablespoon chopped parsley
1 teaspoon crushed dried mint
1/2 cup beef broth
Tabriz Style Kufteh is a delicious traditional Iranian dish, also known as 'Meatballs in a Pot', that is often served at family gatherings and special occasions. This recipe features lamb meatballs that are filled with a sweet and nutty mixture of prunes, onion, and almonds, and then simmered in beef broth with aromatic spices until tender. Instructions

1.In a mixing bowl, combine the cooked rice, cooked split yellow peas, ground lamb, 2 chopped onions, salt, pepper, turmeric, cinnamon, and cloves and mix until well combined.
2.Form the mixture into meatballs the size of a small orange.
3.Using your index finger, make a hole in the center of each meatball, and fill the hole with a mixture of chopped prunes, chopped onion, chopped almonds and butter.
4.Close the hole by pressing the meat mixture together, to ensure the filling is enclosed.
5.In a large pot, bring the beef broth to a boil, then gently add the kufteh to the broth.
6.Add the chopped parsley and dried mint, cover and simmer for approximately 1 hour, or until the kufteh is cooked through.

This dish is full of flavor and makes for a satisfying meal.

It can easily be made ahead of time and reheated for later.

CONS

This recipe requires time and effort to prepare, as it involves multiple steps and cooking the kufteh in broth for an hour.
