4 ounces feta cheese , crumbled
2 tablespoons olive oil ( or salad oil )
2 tablespoons lemon juice
1/2 teaspoon dried dill
1/4 teaspoon salt
1 medium tomatoes , thinly sliced
lettuce leaf , for serving on

Instructions

1.In a saucepan, bring water to a boil. Add bulgur and stir, cover and reduce heat to low. Let simmer for 15-20 minutes or until all water has been absorbed.
2.Fluff bulgur with a fork and let cool to room temperature.
3.In a mixing bowl, combine peas, feta cheese, olive oil, lemon juice, dried dill, and salt. Mix well.
4.Add the cooled bulgur to the pea mixture and stir until well combined.
5.Arrange tomato slices on a platter and top with bulgur-pea mixture.
6.Serve on a lettuce leaf.
