Ingredients

1 lb eggplant ( Japanese , if you can get it )
1 cup oil
1/4 lb ground pork ( or poultry )
3 tablespoons soy sauce
2 teaspoons vinegar
2 teaspoons sugar
2 teaspoons fresh ginger , minced
2 teaspoons garlic , minced
3 hot red peppers , seeded and minced
Szechwan eggplant is a classic Chinese recipe that is known for its spicy and savory flavors. Traditionally made with Szechwan peppers, this recipe substitutes with red peppers which still give it the same kick. Instructions

1.Cut the eggplant into 2-inch long segments, then slice each segment into 1/4 inch thick pieces.
2.Heat oil in a wok or shallow frying pan over high heat. Add eggplant and fry until golden brown. Remove the eggplant from pan and drain on paper towels.
3.Heat 2 tablespoons of oil in a wok or skillet over medium-high heat. Stir-fry the pork or poultry until cooked through. Remove from the wok and set aside.
4.In the same wok or skillet, add another tablespoon of oil. Add ginger, garlic and chopped red peppers. Stir-fry for 30 seconds.
5.Add soy sauce, vinegar and sugar to the pan. Stir until the sugar dissolves. Add the eggplant and stir-fry for 1-2 minutes until the eggplant is coated and hot.
6.Return the pork or poultry to the pan. Stir-fry for an additional minute.
7.Serve hot over rice.
