Ingredients

600 g eggplants
200 g ground pork
100 g prawns , shelled and chopped
2 tablespoons oil
1 tablespoon hot bean paste ( tau pan cheong )
1 tablespoon chopped garlic
1 teaspoon shao hsing hua tiau wine ( or rice wine )
1 teaspoon light soy sauce
1 teaspoon Worcestershire sauce
1 teaspoon sugar , to taste
1/2 teaspoon instant chicken bouillon granules
1 teaspoon cornstarch
1 teaspoon water
scallion , chopped
Szechuan Style Eggplants is a popular dish from the Szechuan region in China, known for its spicy and bold flavors. Instructions

1.Cut the eggplants into bite-sized pieces and set aside.
2.In a bowl, mix the ground pork with 1 tsp. cornstarch and 1 tsp. water.
3.In a wok or large skillet over high heat, add the oil and hot bean paste and fry for a few seconds.
4.Add the garlic and fry for a few more seconds before adding the pork and prawns. Stir-fry until the pork is cooked through and the prawns turn pink.
5.Add in the eggplant, shao hsing hua tiau wine, light soy sauce, Worcestershire sauce, sugar, and chicken bouillon granules. Stir-fry over high heat until the eggplant is soft and tender.
6.In a small bowl, mix the remaining 1 tsp. cornstarch and 1 tsp. water, and stir it into the wok until the sauce thickens.
7.Garnish with chopped scallions and serve immediately over steamed rice.
