12 ounces lamb tenderloin
1 tablespoon soy sauce , plus
1 teaspoon soy sauce ( divided )
1 tablespoon hoisin sauce
3 cloves garlic , finely minced ( divided )
1/2 teaspoon crushed red pepper flakes ( divided )
1 tablespoon peanut oil ( divided )
1 tablespoon grated fresh ginger
2 large red bell peppers , seeded and cut into thin strips
6 scallions , cut into strips the length of the pepper strips
1 tablespoon water
1/3 cup chicken broth
1 tablespoon cornstarch
8 ounces frozen spinach

Instructions

3.Heat the rest of the peanut oil in the same wok or skillet. Add the ginger, the remaining garlic and remaining red pepper flakes. Stir-fry for 10 seconds. Add the peppers and scallions. Stir-fry for 2 minutes or until vegetables are tender yet still crisp.
4.In a small bowl, whisk together the water, chicken broth, cornstarch, and remaining soy sauce. Add to the wok and bring to a boil, stirring constantly.
5.Add the lamb and any juices that have accumulated on the plate. Stir-fry for 1 minute or until the sauce thickens and the lamb is cooked through.
6.Defrost the frozen spinach in the microwave. Drain and squeeze out any excess water. Stir the spinach into the wok. Cook for 1 more minute or until the spinach is heated through.
