Ingredients

1 cup of mild crystallized ginger
375 ml water
115 g brown sugar
125 ml honey
115 g brown sugar , extra
1/4 cup white sugar
125 g butter , softened
2 large eggs
225 g self raising flour
125 ml milk
This syrupy Chinese Ginger Cake is a perfect indulgence if you are craving for some rich and sweet flavors. Crystallized ginger in the cake lends a spicy and sweet taste that pairs perfectly with the sticky syrup topping. It's a popular dessert in Chinese cuisine but can be enjoyed as an afternoon tea cake. The ginger in this cake adds a healthy depth to it, reflecting the spice-heavy cuisine of the region. Instructions

1.Preheat oven to 180C/160C fan/gas 4 and line 23cm cake tin with baking paper.
2.Place ginger, water, brown sugar and honey in a saucepan and bring to the boil.
3.Reduce heat and simmer for 15-20 minutes, until ginger is tender.
4.Remove from heat and leave to cool for a few minutes.
5.In a bowl, beat butter and brown and white sugar together until light and fluffy.
6.Beat in eggs, one at a time.
7.Sift in flour and fold through, then mix in milk.
8.Pour mixture into cake tin and bake for 40 minutes, or until golden and cooked through.
9.While cake is baking, strain ginger mixture into a clean saucepan and simmer until thickened.
10.Pour syrup over warm cake and serve.
