Syrniki is a traditional Russian breakfast food that consists of small, pancake-like patties made from dry curd cottage cheese, eggs, and flour. The sweet and savory flavors of this dish make it a perfect start to the day, especially when topped with a dollop of cool sour cream and a sprinkle of cinnamon. While this recipe calls for dry curd cottage cheese, you can easily substitute regular cottage cheese instead. You can also play around with the flavors of the dish by adding different spices or fruits to the mixture before cooking.

1.In a large bowl, mix together cottage cheese, beaten eggs, sugar, sour cream, lemon juice, lemon rind, flour, and salt.
2.Form small patties with the mixture, roughly the size of your palm.
3.Heat up butter in a skillet over medium-high heat. Add the patties to the skillet and cook until golden brown on both sides, for about 3-4 minutes per side.
