Ingredients

250 g flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
100 ml light fruity olive oil ( I used Mas Portell )
100 ml orange juice
200 g pitted green olives , coarsely chopped
200 g pitted black olives , coarsely chopped
1/4 teaspoon cayenne pepper
1 tablespoon chopped fresh oregano
1 egg yolk , lightly beaten with
2 teaspoons milk

Instructions

1.Preheat the oven to 180°C/350°F/Gas mark 4 and line 2 baking trays with nonstick baking paper.
2.In a bowl, sift together the flour, baking powder and salt.
3.In another bowl, whisk together the olive oil and orange juice.
4.Stir in the flour mixture, then the olives, cayenne pepper and oregano, until well combined.
5.Divide the dough into 12 equal portions and roll each portion into a ball.
6.Flatten each ball into a circle of about 10 cm / 4 inches in diameter, to a thickness of 3mm - 1/8th inch.
7.Place half the circles onto the baking trays and brush them with the egg and milk mixture.
8.Top each one with another circle of pastry and press down lightly.
9.Brush the tops with the remaining egg and milk mixture.
10.Bake for 15-20 minutes, until golden brown and cooked through.
11.Serve warm or at room temperature.
