The Swiss roll is a classic dessert that has been enjoyed for generations. Its origins can be traced back to Switzerland, where it was first created in the late 19th century as a variation of the jelly roll cake. This Swiss roll recipe features a classic lemon curd filling which provides a burst of tangy flavor that perfectly complements the delicate sponge cake. Its light texture and refreshing taste make it a perfect dessert that can be enjoyed all year round.

Instructions

.Preheat the oven to 375°F. Grease a 9×12 inch baking sheet with butter and flour, or use parchment paper.
.Melt the unsalted butter in a saucepan over medium heat. Add the sugar, lemon juice, egg yolks, and grated lemon peel to make a lemon curd mixture, stirring frequently until thickened, for about 10 minutes. Remove from heat and let cool briefly.
.While the lemon curd cools, cream the softened butter and all-purpose flour together in a mixing bowl. Gradually add the sugar, eggs, and self-rising flour, continuing to mix until well combined.
.Spread the cake mixture evenly onto the baking sheet and bake for 10-12 minutes or until golden brown.
.Remove the cake from the oven and immediately turn it out onto a clean towel, gently rolling it up like a towel. Leave it to cool rolled in the towel for a few minutes.
.Unroll the cake and spread the lemon curd mixture evenly over the top.
.Re-roll the cake gently to create a Swiss roll.
.Dust the top of the roll with superfine sugar.
