Ingredients

2 garlic cloves , crushed
1 red pepper , deseeded and sliced
1 orange bell pepper , deseeded and sliced
227 g water chestnuts , drained and sliced

Instructions

1.In a bowl, mix together 4 tablespoons of vegetable stock, 2 tablespoons of light soy sauce, and 2 teaspoons of cornflour. Set the mixture aside.
2.Cook 150g of flat rice noodles according to package directions. Drain and set aside.
3.Cut 250g of Swiss chard into bite-size pieces, discarding the thick stems. Set aside.
4.In a pan, heat 1 tablespoon of sesame oil over medium-high heat. Add 200g of shiitake mushrooms and sauté for 2 minutes. Add 2 garlic cloves and sauté for an additional 1 minute.
5.Add the Swiss chard, 1 red pepper (deseeded and sliced), 1 orange bell pepper (deseeded and sliced), and 227g of water chestnuts (drained and sliced) to the pan. Cook for 3-5 minutes.
6.Add the vegetable stock mixture to the pan and cook, stirring constantly, until the sauce thickens.
7.Serve the stir fry over the cooked rice noodles.
