Ingredients

1 2/3 cups almonds , finely ground
2/3 cup carrot , grated
3/4 cup dry breadcrumbs
1 1/4 teaspoons ginger

6 eggs , separated
1 1/4 cups sugar
2 teaspoons lemon rind
3 tablespoons lemon juice
60 g butter , softened
60 g mascarpone cheese
125 g icing sugar

Instructions

1.Preheat the oven to 180°C/ 350°F.
2.In a large bowl, combine the ground almonds, grated carrot, dry breadcrumbs, ginger, cinnamon, mace, and baking powder.
3.In another bowl, whisk the egg yolks with the sugar until pale and creamy.
4.Add the lemon rind and juice, softened butter, and mascarpone cheese to the egg yolks and sugar mixture.
5.Beat the egg whites to a stiff peak and fold into the mixture in two batches.
6.Grease a 10-inch springform tin and pour the batter into it.
7.Bake for 45-50 minutes or until a skewer comes out clean when inserted in the center.
8.Remove from the oven and let it cool on a wire rack.
9.Once cool, mix the icing sugar with the mascarpone cheese and spread over the top of the cake.
10.Decorate with grated carrot, if desired.
