1 cup leek , finely chopped , white and green parts

1 baking potato , medium , peeled and finely chopped
1 cup heavy cream

Instructions

1.Rinse the pearl barley in cold water several times until the water runs clear.
2.In a large pot, add the smoked ham hock, salt, black pepper and water. Bring to a boil and skim off any foam.
3.Add the chopped leek, celery, onion, and potato, along with the rinsed pearl barley. Reduce the heat to low and let it simmer for 2-3 hours, or until the meat is falling off the bone.
4.Remove the ham hock and allow it to cool. Cut the meat into small pieces and discard the bones and fat. Add the meat back to the pot and stir in the heavy cream.
5.Serve hot with crusty bread. Enjoy!
