Ingredients

1 medium baking potato
3 whole plain matzos
4 medium leeks , finely chopped
2 tablespoons butter
4 large scallions , finely sliced
1/2 teaspoon dried tarragon leaves
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 cup part-skim ricotta cheese
1/4 parmesan cheese , grated
8 ounces swiss cheese , grated ( or emmenthal )
2 large eggs

Instructions

1.Preheat the oven to 375°F. Grease a 9-inch pie dish.
2.Peel the baking potato and slice very thinly. Set aside.
3.Take the matzos and soak them in a bowl of warm water for 2 minutes, or until fully softened.
4.Drain the matzos and crumble into small pieces. Set aside.
5.In a large skillet, sauté the leeks in butter for 3-4 minutes or until softened.
6.Add the scallions, tarragon, salt, and black pepper to the skillet and cook for another 2-3 minutes, or until the scallions are softened.
7.Stir in the ricotta cheese, parmesan cheese, and half of the grated swiss cheese into the skillet.
8.Beat in the eggs.
9.Layer the sliced potatoes on the bottom of the greased pie dish.
10.Pour the leek mixture on top of the potatoes.
11.Sprinkle the remaining grated swiss cheese over the top of the leek mixture.
12.Place the soaked and crumbled matzos over the top of the cheese.
13.Bake the pie for 35-40 minutes, or until the top is golden brown. Let cool for 10 minutes before serving.
