Ingredients

3 large red chilies , deseeded and chopped
10 cm fresh ginger , grated
6 tablespoons sunflower oil
2 teaspoons caster sugar
115 g plain flour
1 teaspoon baking powder
1 large egg
225 ml milk
225 g frozen sweetcorn , thawed
150 g vegetarian cheddar cheese , grated
4 tablespoons chopped fresh coriander
1 small onion , chopped
4 spring onions , chopped
vegetable oil ( for frying )
mixed salad green ( optional )
lime wedge ( optional )
Sweetcorn Fritters are a popular snack in many parts of the world. They are crispy on the outside and soft on the inside, with a sweet corn flavor. This recipe adds vegetarian cheddar cheese, onions, and coriander to make them even more flavorful. The chilli and ginger dipping sauce adds a spicy twist to the dish. Instructions

1.In a blender bowl, add 2 red chilies and ginger. Add 4 tablespoons of water and blend until it forms a smooth paste. Keep aside.
2.Now, take a saucepan and heat 2 tablespoons of oil in it. Add the remaining chopped red chillies and fry for a minute. Add the ginger paste and sugar. Cook for two minutes on medium heat until it is nicely caramelized.
3.In a bowl, sift together the flour and baking powder. Add egg and milk to the mixture and whisk until smooth.
4.Now, stir in the frozen sweetcorn, grated cheese, onions, coriander and chopped spring onions. Mix well and let it rest for 10 minutes.
5.Heat the vegetable oil in a deep frying pan. Add batter mixture 1 tablespoon at a time and fry until golden brown. Drain the excess oil on a paper towel.
6.Serve with chilli and ginger dipping sauce, mixed salad greens, and lime wedge (optional).
