Ingredients

1 cup sweet corn ( crushed )
1 tablespoon oil
to deep frying oil
1 medium sized onion ( chopped )
2 tablespoons refined flour ( maida )
1 cup skim milk
salt
1/4 teaspoon black pepper
1/8 teaspoon ground nutmeg
1 cup rice ( boiled )
2 tablespoons fresh coriander leaves ( chopped )
2 fresh red chilies ( crushed )
1 1/2 cups vermicelli ( crushed )

Instructions

1.Heat oil in a pan and sauté onions for 2-3 minutes.
2.Add refined flour to the pan and mix well.
3.Gradually add skim milk while stirring continuously to avoid lumps.
4.Add crushed sweet corn, salt, black pepper, ground nutmeg, boiled rice, fresh coriander leaves and crushed red chilies to the pan and mix well.
5.Cook for 2-3 minutes until the mixture thickens and comes together.
6.Cool the mixture in the refrigerator for 10-15 minutes.
7.Once cooled, shape the mixture into small croquettes.
8.Roll them in crushed vermicelli.
9.Heat oil in a pan and deep fry the croquettes until golden brown.
10.Drain on paper towels and serve hot.
