3 tablespoons sugar

2 large potatoes , cut up into large chunks
3 medium carrots , cut into 2-inch length
1/2 cup mushroom , halved
1 lemongrass , stalk
10 pine nuts ( for garnishing )

1 liter Pepsi ( for marination )

Instructions

1.In a bowl, mix together 1/2 cup soy sauce, 1/3 cup vinegar, and 3 tablespoons sugar until sugar dissolves.
2.Add 1 liter of Pepsi and mix well.
3.Add sliced pork shoulder, 1 tablespoon red pepper flakes, 5 finely chopped garlic cloves, and grounded 1 star anise to the mixture and let it marinate for at least 1 hour.
4.Heat a pot over high heat and add 1 tablespoon sesame oil.
5.Add the marinated pork and let it brown for 3-5 mins for each side.
6.Add 3 cups of water and lemongrass stalk and bring it to a boil for 20 mins.
7.Add chopped potatoes, carrots, and mushroom and simmer for additional 30 mins or until vegetables are tender.
8.Serve hot with sprinkled pine nuts and sliced green onion.
