Ingredients

1/2 cup washed and picked over mung beans ( green )
1/2 finely diced onion ( optional )
2 finely minced green chilies ( or more )
1 tablespoon finely shredded ginger
1 teaspoon cumin seed
1 teaspoon mustard seeds
1 lime , juice of
1 lime , quartered ( garnish )
2 teaspoons finely chopped cilantro
1 teaspoon jaggery ( or sugar as a substitute )
1 teaspoon canola oil
1/2 teaspoon ground coriander powder
1 teaspoon salt , more to taste

Instructions

1.Rinse the mung beans under cold running water and soak them in warm water for 6 to 7 hours, or until they sprout.
2.Heat the oil in a large skillet or wok over medium heat. Add mustard seeds and cumin seeds to the skillet and wait for them to sizzle.
3.Add diced onions and stir them until they are brown.
4.Add minced chilies and ginger to the skillet and give them a good mix.
5.Add the sprouted mung beans into the skillet along with salt, coriander and jaggery. Mix well and cook for 4-5 minutes.
6.Switch off the flame and add lime juice into the skillet. Mix well and garnish with chopped cilantro and lime quarters.Sweet & Sour Sprouted Mung Beans are ready to serve.
