chopped ripe mango

Instructions

1.In a pot, bring the lentils, water, salt, and pepper to a boil, reduce heat to low, cover and cook for 20 minutes or until tender.
2.While the lentils cook, in a bowl, mix together soy sauce, almond butter, chili paste, sriracha sauce, ginger, garlic, garlic powder, sesame oil, maple syrup, and rice vinegar. Set aside.
3.Once the lentils are done, remove them from heat, strain, and cool them down. Then stir in the sweet and sour sauce.
4.To assemble lettuce wraps, lay a piece of lettuce, top with lentil mixture, chopped mango, chopped cilantro, and chopped peanuts.
5.Wrap it up like a burrito, and enjoy!
